Zuppa Toscana
Ingredients:
- 1 pound ground Italian sausage
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 4 potatoes, peeled and diced
- 1/2 teaspoon red pepper flakes
- 2 cups kale, chopped
- 1 cup heavy cream
- Salt and pepper to taste
Instructions:
- In a large pot, brown the Italian sausage over medium heat.
- Add the onion and garlic and sauté until softened, about 2-3 minutes.
- Pour in the chicken broth and bring to a boil.
- Stir in the potatoes and red pepper flakes, and let cook for 10 minutes or until the potatoes are tender.
- Add in the kale and cook for an additional 5 minutes.
- Reduce heat to low and stir in the heavy cream. Let simmer for 5 minutes.
- Season with salt and pepper to taste. Serve hot and enjoy!
