Zuppa Toscana

  1. In a large pot, brown the Italian sausage over medium heat.
  2. Add the onion and garlic and sauté until softened, about 2-3 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the potatoes and red pepper flakes, and let cook for 10 minutes or until the potatoes are tender.
  5. Add in the kale and cook for an additional 5 minutes.
  6. Reduce heat to low and stir in the heavy cream. Let simmer for 5 minutes.
  7. Season with salt and pepper to taste. Serve hot and enjoy!
