Zuppa di Pesce
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/2 cup white wine
- 1 (28-ounce) can diced tomatoes
- 1 cup chicken or fish broth
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1 pound white fish, such as cod or haddock, cut into bite-sized pieces
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound scallops
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions:
- In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, and red pepper, and cook for 5 minutes until softened.
- Add white wine, diced tomatoes, broth, Italian seasoning, and red pepper flakes to the pot. Bring to a simmer and let cook for 15 minutes.
- Season the fish, shrimp, and scallops with salt and pepper, then add them to the pot. Cook for an additional 10 minutes, until seafood is fully cooked and flavors have melded together.
- Garnish with chopped parsley and serve hot. Enjoy your delicious Zuppa di Pesce!
