Zucchini Soup

Instructions:

  1. In a large pot, sauté the chopped onion and minced garlic until softened.
  2. Add in the chopped zucchini and continue to cook for another 5 minutes.
  3. Pour in the chicken or vegetable broth and bring to a boil.
  4. Reduce heat and add in the dried thyme, salt, and black pepper. Let it simmer for 15 minutes.
  5. Using an immersion blender or transfering to a blender, blend the soup until smooth.
  6. Return the soup to the pot, add in the heavy cream and stir well.
  7. Simmer for an additional 5 minutes.
  8. Serve hot, garnished with croutons and fresh parsley.
