Zucchini Soup
Ingredients:
- 2 large zucchini, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of heavy cream
- Croutons, for garnish
- Fresh parsley, for garnish
Instructions:
- In a large pot, sauté the chopped onion and minced garlic until softened.
- Add in the chopped zucchini and continue to cook for another 5 minutes.
- Pour in the chicken or vegetable broth and bring to a boil.
- Reduce heat and add in the dried thyme, salt, and black pepper. Let it simmer for 15 minutes.
- Using an immersion blender or transfering to a blender, blend the soup until smooth.
- Return the soup to the pot, add in the heavy cream and stir well.
- Simmer for an additional 5 minutes.
- Serve hot, garnished with croutons and fresh parsley.
