Zucchini Salad
Ingredients:
- 2 medium zucchinis, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 1/4 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
- In a large bowl, combine zucchinis, red onion, cherry tomatoes, feta cheese, black olives and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt and pepper.
- Pour the dressing over the zucchini mixture and toss to combine.
- Refrigerate for at least 30 minutes before serving to allow flavors to blend.
- Serve chilled and enjoy!
