Zucchini Pancakes

  1. Grate the zucchinis and onion into a bowl.
  2. Add in the flour, Parmesan cheese, baking powder, and salt to the bowl.
  3. In a separate small bowl, beat the eggs and milk together. Then add it to the zucchini mixture and mix well.
  4. Heat 2 tbsp of olive oil in a non-stick pan over medium heat.
  5. Scoop 1/4 cup of the batter into the pan and flatten it with a spoon. Repeat until the pan is full.
  6. Cook for 2-3 minutes on each side, until golden brown and crispy.
  7. Remove from the pan and place on a paper towel to absorb excess oil.
  8. Repeat with remaining batter.
  9. Serve warm with your favorite toppings, such as sour cream or applesauce.
