Zucchini Pancakes
Ingredients:
- 2 medium-sized zucchinis
- 1 small onion
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2 large eggs, beaten
- 1/4 cup milk
- 2 tbsp olive oil
Instructions:
- Grate the zucchinis and onion into a bowl.
- Add in the flour, Parmesan cheese, baking powder, and salt to the bowl.
- In a separate small bowl, beat the eggs and milk together. Then add it to the zucchini mixture and mix well.
- Heat 2 tbsp of olive oil in a non-stick pan over medium heat.
- Scoop 1/4 cup of the batter into the pan and flatten it with a spoon. Repeat until the pan is full.
- Cook for 2-3 minutes on each side, until golden brown and crispy.
- Remove from the pan and place on a paper towel to absorb excess oil.
- Repeat with remaining batter.
- Serve warm with your favorite toppings, such as sour cream or applesauce.
