Zucchini Noodles
Ingredients:
- 3-4 medium sized zucchinis
- 1 tablespoon olive oil
- 2 cloves of garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- Grated Parmesan cheese
Instructions:
- Using a spiralizer, spiralize the zucchinis to create thin noodle-like strands. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes and cook for 1-2 minutes, or until the garlic is fragrant.
- Add the zucchini noodles to the pan and toss to coat them with the oil and garlic mixture. Cook for 3-4 minutes, or until the noodles are slightly softened.
- Season the noodles with salt and pepper to taste. Serve hot and top with grated Parmesan cheese.
