Zucchini Muffins
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup grated zucchini
- 2 eggs
- 1/4 cup vegetable oil
- 1/4 cup applesauce
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
- In a separate bowl, beat the eggs and then mix in the grated zucchini, vegetable oil, applesauce, and vanilla extract.
- Pour the wet mixture into the dry ingredients and mix until just combined.
- Scoop the batter evenly into a lined or greased muffin tin.
- Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
- Let muffins cool for 5-10 minutes before removing them from the tin.
