Zucchini Muffins

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, beat the eggs and then mix in the grated zucchini, vegetable oil, applesauce, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Scoop the batter evenly into a lined or greased muffin tin.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  7. Let muffins cool for 5-10 minutes before removing them from the tin.
  8. Serve and enjoy!
