Zucchini Lasagna
Ingredients:
- 1 large zucchini
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 (14.5 oz) cans of diced tomatoes
- 1 (6 oz) can of tomato paste
- 1 tsp salt
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 cup water
- 1 egg
- 1 carton (15 oz) of ricotta cheese
- 2 tbsp chopped fresh parsley
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 3 cups shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
Instructions:
- Preheat oven to 375°F.
- Slice the zucchini lengthwise into thin, lasagna-like strips.
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned. Drain off excess fat.
- Add the diced tomatoes, tomato paste, 1 tsp salt, dried oregano, dried basil, and water to the skillet with the ground beef. Bring to a boil, reduce heat, and simmer for 20 minutes.
