Zucchini Fritters

  1. Grate the zucchinis and place them in a colander over the sink. Sprinkle with salt and let sit for 10 minutes. Then, squeeze out as much moisture as possible from the zucchini.
  2. In a large mixing bowl, combine the zucchini, onion, flour, eggs, milk, Parmesan cheese, garlic powder, salt, and pepper. Mix well.
  3. In a large skillet, heat oil over medium heat. Spoon heaping tablespoons of the zucchini mixture into the hot oil, flattening them with the back of a spoon. Fry for 2-3 minutes on each side, until golden brown.
  4. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  5. Serve hot with your choice of dipping sauce, such as ranch dressing or marinara sauce.
