Zucchini Fritters
Ingredients:
- 2 medium zucchinis
- 1 onion, diced
- 1 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Instructions:
- Grate the zucchinis and place them in a colander over the sink. Sprinkle with salt and let sit for 10 minutes. Then, squeeze out as much moisture as possible from the zucchini.
- In a large mixing bowl, combine the zucchini, onion, flour, eggs, milk, Parmesan cheese, garlic powder, salt, and pepper. Mix well.
- In a large skillet, heat oil over medium heat. Spoon heaping tablespoons of the zucchini mixture into the hot oil, flattening them with the back of a spoon. Fry for 2-3 minutes on each side, until golden brown.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with your choice of dipping sauce, such as ranch dressing or marinara sauce.
