Zucchini Bread
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 cup white sugar
- 1 cup brown sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup vegetable oil
- 2 cups grated zucchini
- 1 cup chopped nuts (optional)
Instructions:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
- In a large bowl, sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In a separate bowl, beat together white sugar, brown sugar, eggs, vanilla extract, and vegetable oil.
- Stir the wet ingredients into the dry ingredients, then fold in the grated zucchini and chopped nuts (if using).
- Divide the batter evenly between the two prepared loaf pans.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely before slicing and serving.
