Zucchini Bread

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
  2. In a large bowl, sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, beat together white sugar, brown sugar, eggs, vanilla extract, and vegetable oil.
  4. Stir the wet ingredients into the dry ingredients, then fold in the grated zucchini and chopped nuts (if using).
  5. Divide the batter evenly between the two prepared loaf pans.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  7. Cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely before slicing and serving.
