Zucchini Boats
Ingredients:
- 4 medium zucchinis
- 1 pound ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt, to taste
- Black pepper, to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and use a spoon to scoop out the seeds and create a hollow space in the center.
- In a large skillet, cook the ground beef over medium heat until browned.
- Add chopped onion, red bell pepper, and minced garlic to the skillet and cook until vegetables are softened.
- Add halved cherry tomatoes, Italian seasoning, salt, and black pepper to the skillet and cook for another 2-3 minutes.
- Stir in marinara sauce and let the mixture simmer for 5-10 minutes.
- Fill the hollowed zucchinis with the ground beef mixture.
- Place zucchinis on a baking dish and bake for 20 minutes.
- Remove from the oven and sprinkle shredded mozzarella cheese on top of each zucchini boat.
- Bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy your delicious zucchini boats
