Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and use a spoon to scoop out the seeds and create a hollow space in the center.
  3. In a large skillet, cook the ground beef over medium heat until browned.
  4. Add chopped onion, red bell pepper, and minced garlic to the skillet and cook until vegetables are softened.
  5. Add halved cherry tomatoes, Italian seasoning, salt, and black pepper to the skillet and cook for another 2-3 minutes.
  6. Stir in marinara sauce and let the mixture simmer for 5-10 minutes.
  7. Fill the hollowed zucchinis with the ground beef mixture.
  8. Place zucchinis on a baking dish and bake for 20 minutes.
  9. Remove from the oven and sprinkle shredded mozzarella cheese on top of each zucchini boat.
  10. Bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  11. Serve hot and enjoy your delicious zucchini boats
