Zucchini and Corn Tacos
Ingredients:
- 1 medium zucchini, chopped
- 1 can of corn, drained
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 1 clove of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 8 taco shells
- Optional toppings: shredded cheese, salsa, avocado, cilantro
Instructions:
- In a large skillet, heat olive oil over medium heat.
- Add in chopped zucchini, onion, bell pepper, and garlic. Cook for 5 minutes, stirring occasionally.
- Stir in cumin, chili powder, and salt. Cook for an additional 2 minutes.
- Add in drained corn and cook for another 2 minutes.
- While the vegetables are cooking, heat taco shells according to package instructions.
- Spoon the vegetable mixture into the taco shells and top with desired toppings.
- Serve and enjoy!
