Zucchini and Corn Tacos

  1. In a large skillet, heat olive oil over medium heat.
  2. Add in chopped zucchini, onion, bell pepper, and garlic. Cook for 5 minutes, stirring occasionally.
  3. Stir in cumin, chili powder, and salt. Cook for an additional 2 minutes.
  4. Add in drained corn and cook for another 2 minutes.
  5. While the vegetables are cooking, heat taco shells according to package instructions.
  6. Spoon the vegetable mixture into the taco shells and top with desired toppings.
  7. Serve and enjoy!
