Zesty Quinoa Salad
Ingredients:
- 1 cup quinoa, rinsed and drained
- 1 ½ cups water
- 2 tablespoons olive oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup cherry tomatoes, halved
- ½ cup red onion, diced
- 1 avocado, diced
- ¼ cup fresh cilantro, chopped
- ½ cup feta cheese, crumbled
- Salt and pepper to taste
Instructions:
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, until all water is absorbed. Fluff with a fork and set aside to cool.
- In a large skillet, heat olive oil over medium heat. Add diced bell peppers and cook for 5 minutes. Then add cherry tomatoes and red onion, and cook for an additional 3 minutes, until vegetables are slightly softened.
- In a large bowl, combine the cooled quinoa, cooked vegetables, avocado, cilantro, and feta cheese. Season with salt and pepper to taste.
- Serve chilled or at room temperature. Enjoy!
