Zesty Quinoa Salad

  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, until all water is absorbed. Fluff with a fork and set aside to cool.
  2. In a large skillet, heat olive oil over medium heat. Add diced bell peppers and cook for 5 minutes. Then add cherry tomatoes and red onion, and cook for an additional 3 minutes, until vegetables are slightly softened.
  3. In a large bowl, combine the cooled quinoa, cooked vegetables, avocado, cilantro, and feta cheese. Season with salt and pepper to taste.
  4. Serve chilled or at room temperature. Enjoy!
