Zesty Bean Salad
Ingredients:
- A can of black beans, drained and rinsed
- A can of kidney beans, drained and rinsed
- A can of corn, drained
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1/4 cup cilantro, chopped
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp red pepper flakes
- Salt and pepper, to taste
Instructions:
- In a large bowl, combine the black beans, kidney beans, corn, bell peppers, onion, and cilantro.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, cumin, chili powder, red pepper flakes, salt, and pepper.
- Pour the dressing over the bean salad and mix well to combine.
- Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
- Once chilled, serve and enjoy your zesty bean salad!
