Zeppole
Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions:
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- In a separate bowl, mix together the milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined and a thick batter forms.
- In a large, deep skillet, heat an inch of vegetable oil over medium-high heat until it reaches 375 degrees F.
- Using a small cookie scoop or spoon, drop the batter into the hot oil, forming small round fritters.
- Cook for 2-3 minutes on each side, or until golden brown and fully cooked.
- Remove the zeppole from the oil and place on a paper towel-lined plate to drain excess oil.
- Sprinkle with powdered sugar while still warm.
- Serve and enjoy!
