Zeppole

  1. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix together the milk, eggs, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until well combined and a thick batter forms.
  4. In a large, deep skillet, heat an inch of vegetable oil over medium-high heat until it reaches 375 degrees F.
  5. Using a small cookie scoop or spoon, drop the batter into the hot oil, forming small round fritters.
  6. Cook for 2-3 minutes on each side, or until golden brown and fully cooked.
  7. Remove the zeppole from the oil and place on a paper towel-lined plate to drain excess oil.
  8. Sprinkle with powdered sugar while still warm.
  9. Serve and enjoy!
