Yucca Fries

  1. Peel the yucca and cut it into thin strips, about 1/4 inch thick.
  2. Place the yucca strips in a bowl of cold water and let them soak for 30 minutes.
  3. In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).
  4. Drain the yucca strips and pat them dry with paper towels.
  5. In a small bowl, mix together salt, black pepper, paprika, and garlic powder.
  6. Toss the yucca strips in the spice mixture until evenly coated.
  7. Working in batches, fry the yucca strips in the hot oil for about 5-7 minutes, or until they are golden brown and crispy.
  8. Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. If desired, sprinkle the fries with grated parmesan cheese while they are still hot.
  10. Serve hot and enjoy your homemade yucca fries!
