Yucca Cake
Ingredients:
- 2 cups mashed yucca root
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup shredded coconut
- 1/4 cup milk
- 1/4 cup raisins
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat together the mashed yucca root, sugar, and vegetable oil.
- Add in the eggs and vanilla extract, and mix until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this mixture to the yucca mixture, stirring until just incorporated.
- Stir in the shredded coconut, milk, and raisins.
- Pour the batter into a greased 9-inch baking pan.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool for 10 minutes before serving.
