Yucca Cake

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat together the mashed yucca root, sugar, and vegetable oil.
  3. Add in the eggs and vanilla extract, and mix until well combined.
  4. In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this mixture to the yucca mixture, stirring until just incorporated.
  5. Stir in the shredded coconut, milk, and raisins.
  6. Pour the batter into a greased 9-inch baking pan.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool for 10 minutes before serving.
