Yolk-free Omelette

  1. In a small bowl, beat the egg whites with a fork until well combined.
  2. Heat a non-stick skillet over medium-high heat and add butter or cooking spray.
  3. Once the butter is melted or the skillet is coated with cooking spray, pour in the beaten egg whites.
  4. Using a spatula, spread the egg whites evenly in the skillet.
  5. Sprinkle the chopped vegetables and shredded cheese on one half of the egg whites.
  6. Add salt and pepper to taste.
  7. Using the spatula, carefully fold the other half of the egg whites over the vegetables and cheese.
  8. Cook for 2-3 minutes, until the bottom is golden brown.
  9. Using the spatula, carefully flip the omelette and cook for an additional 1-2 minutes.
  10. Transfer the omelette to a plate and serve hot.
