Yogurt Pancakes

  1. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the yogurt, milk, egg, melted butter, and vanilla extract until well combined.
  3. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly coat with melted butter.
  5. Using a 1/4 cup measurement, pour the batter onto the skillet and cook until bubbles form on the surface and the edges look slightly dry.
  6. Flip the pancakes and cook for an additional minute on the other side, until lightly golden.
  7. Repeat with the remaining batter, adding more melted butter to the skillet as needed.
  8. Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
