Yogurt Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup plain yogurt
- 1/2 cup milk
- 1 egg
- 2 tbsp melted butter, plus more for cooking
- 1 tsp vanilla extract
Instructions:
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the yogurt, milk, egg, melted butter, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Heat a non-stick skillet or griddle over medium heat and lightly coat with melted butter.
- Using a 1/4 cup measurement, pour the batter onto the skillet and cook until bubbles form on the surface and the edges look slightly dry.
- Flip the pancakes and cook for an additional minute on the other side, until lightly golden.
- Repeat with the remaining batter, adding more melted butter to the skillet as needed.
- Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
