Yellowtail Snapper

  1. Preheat your oven to 375°F (190°C).
  2. Clean and pat dry the yellowtail snapper.
  3. Season the fish with salt and pepper, inside and out.
  4. Slice the lemon and stuff the slices inside the fish.
  5. Place the fish on a baking tray lined with aluminum foil.
  6. In a small saucepan, melt the butter and olive oil together over medium heat.
  7. Brush the butter and oil mixture onto the fish, making sure to coat both sides.
  8. If desired, sprinkle fresh herbs on top of the fish.
  9. Bake the fish in the preheated oven for about 20 minutes, or until the flesh is flaky and opaque.
  10. Remove from the oven and let the fish cool for a few minutes before serving.
