Yellow Tomato Gazpacho
Ingredients:
- 6 large yellow tomatoes
- 1 large cucumber, peeled and seeded
- 1 red bell pepper, seeded
- 1/2 small red onion
- 3 cloves of garlic
- 1/4 cup olive oil
- 1/4 cup white vinegar
- 2 tsp salt
- 1 tsp black pepper
- 1/4 cup fresh parsley
- 1/4 cup fresh basil
- 1/4 cup fresh cilantro
Instructions:
- Roughly chop the tomatoes, cucumber, red bell pepper, red onion, and garlic cloves and place in a large bowl.
- Add the olive oil, white vinegar, salt, and black pepper to the bowl and stir to combine.
- Cover and refrigerate for at least 2 hours, or overnight.
- Once chilled, blend the mixture until smooth using a blender or immersion blender.
- Stir in the fresh herbs and blend again until well combined.
- Taste and adjust seasoning if needed.
- Serve chilled and enjoy your delicious Yellow Tomato Gazpacho!
