Yellow Tomato Gazpacho

  1. Roughly chop the tomatoes, cucumber, red bell pepper, red onion, and garlic cloves and place in a large bowl.
  2. Add the olive oil, white vinegar, salt, and black pepper to the bowl and stir to combine.
  3. Cover and refrigerate for at least 2 hours, or overnight.
  4. Once chilled, blend the mixture until smooth using a blender or immersion blender.
  5. Stir in the fresh herbs and blend again until well combined.
  6. Taste and adjust seasoning if needed.
  7. Serve chilled and enjoy your delicious Yellow Tomato Gazpacho!
