Yellow Squash Casserole

  1. Preheat your oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
  2. Cut the squash into small chunks and place in a pot. Add enough water to cover the squash and bring to a boil. Cook for about 10 minutes or until squash is tender. Drain and mash the squash.
  3. In a large bowl, mix together the mashed squash, chopped onion, grated cheese, mayonnaise, salt, and pepper. Spread the mixture into the prepared baking dish.
  4. In a small bowl, mix together the bread crumbs and melted butter. Sprinkle the mixture over the top of the squash mixture in the baking dish.
  5. Bake for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
  6. Let cool for a few minutes before serving. Enjoy your delicious Yellow Squash Casserole!
