Yellow Squash Casserole
Ingredients:
- 6 medium yellow squash
- 1 small onion, finely chopped
- 1 cup grated cheddar cheese
- 1 cup mayonnaise
- 1/2 cup bread crumbs
- 1/4 cup melted butter
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Preheat your oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
- Cut the squash into small chunks and place in a pot. Add enough water to cover the squash and bring to a boil. Cook for about 10 minutes or until squash is tender. Drain and mash the squash.
- In a large bowl, mix together the mashed squash, chopped onion, grated cheese, mayonnaise, salt, and pepper. Spread the mixture into the prepared baking dish.
- In a small bowl, mix together the bread crumbs and melted butter. Sprinkle the mixture over the top of the squash mixture in the baking dish.
- Bake for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
