Yellow Pepper Soup
Ingredients:
- 4 yellow bell peppers, diced
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper, to taste
- Optional toppings: diced avocado, croutons, grated cheese
Instructions:
- In a large pot, sauté the diced onion and minced garlic over medium heat until onions are translucent, about 5 minutes.
- Add the diced yellow peppers to the pot and continue to cook until they start to soften, about 7-10 minutes.
- Pour in the vegetable broth and bring to a boil. Lower the heat and let simmer for 15 minutes.
- Using an immersion blender or transferring the soup to a blender, blend until smooth.
- Return the soup to the pot and stir in the heavy cream. Heat until warmed through.
- Season with salt and pepper, to taste.
- Serve hot and top with optional toppings, if desired.
