Yellow Pepper Soup

  1. In a large pot, sauté the diced onion and minced garlic over medium heat until onions are translucent, about 5 minutes.
  2. Add the diced yellow peppers to the pot and continue to cook until they start to soften, about 7-10 minutes.
  3. Pour in the vegetable broth and bring to a boil. Lower the heat and let simmer for 15 minutes.
  4. Using an immersion blender or transferring the soup to a blender, blend until smooth.
  5. Return the soup to the pot and stir in the heavy cream. Heat until warmed through.
  6. Season with salt and pepper, to taste.
  7. Serve hot and top with optional toppings, if desired.
