Yellow Beet Salad

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Trim off the tops and roots of the beets and wash thoroughly.
  3. Line a baking sheet with aluminum foil and place the beets on top.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Wrap the beets in the foil and place in the oven for 45-60 minutes, or until tender.
  6. Remove the beets from the oven and let cool.
  7. Once cool, peel the skin off the beets and dice into bite-sized pieces.
  8. In a small bowl, mix together the balsamic vinegar and honey to create the dressing.
  9. In a large bowl, combine the diced beets, feta cheese, walnuts, and cranberries.
  10. Pour the dressing over the beet mixture and toss to coat.
  11. Season with salt and pepper, to taste.
  12. Serve immediately or refrigerate until ready to serve.
