Yellow Beet Salad
Ingredients:
- 3 yellow beets, roasted and diced
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- Salt and pepper, to taste
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- Trim off the tops and roots of the beets and wash thoroughly.
- Line a baking sheet with aluminum foil and place the beets on top.
- Drizzle with olive oil and season with salt and pepper.
- Wrap the beets in the foil and place in the oven for 45-60 minutes, or until tender.
- Remove the beets from the oven and let cool.
- Once cool, peel the skin off the beets and dice into bite-sized pieces.
- In a small bowl, mix together the balsamic vinegar and honey to create the dressing.
- In a large bowl, combine the diced beets, feta cheese, walnuts, and cranberries.
- Pour the dressing over the beet mixture and toss to coat.
- Season with salt and pepper, to taste.
- Serve immediately or refrigerate until ready to serve.
