Yam Soup
Ingredients:
- 2 lbs yams
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp coconut oil
- 4 cups vegetable broth
- 1 can coconut milk
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
Instructions:
- Peel and chop the yams into small chunks.
- In a large pot, heat the coconut oil over medium heat. Add the onion, garlic, and ginger and sauté for 2-3 minutes.
- Add the chopped yams to the pot and stir to coat with the onion mixture.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low and let simmer for 20-25 minutes, or until yams are tender.
- Using an immersion blender or transferring to a blender, puree the soup until smooth.
- Return the soup to the pot and stir in the can of coconut milk. Heat for an additional 5 minutes.
- Season with salt and pepper to taste.
- If desired, garnish with fresh parsley or cilantro before serving.
