Yam Soup

Instructions:

  1. Peel and chop the yams into small chunks.
  2. In a large pot, heat the coconut oil over medium heat. Add the onion, garlic, and ginger and sauté for 2-3 minutes.
  3. Add the chopped yams to the pot and stir to coat with the onion mixture.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat to low and let simmer for 20-25 minutes, or until yams are tender.
  5. Using an immersion blender or transferring to a blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in the can of coconut milk. Heat for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. If desired, garnish with fresh parsley or cilantro before serving.
