Yabby Bisque
Ingredients:
- 1kg yabbies, cleaned
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tbsp butter
- 1 tbsp olive oil
- 1/4 cup tomato paste
- 1/2 cup white wine
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions:
- In a large pot, heat the butter and olive oil over medium heat.
- Add the chopped onion, garlic, carrots, and celery and sauté for 5 minutes.
- Add the cleaned yabbies to the pot and stir for 2-3 minutes until they start to turn pink.
- Add the tomato paste and white wine and stir to combine.
- Pour in the chicken or vegetable broth and bring to a simmer.
- Cover the pot and let it simmer for 20 minutes.
- Remove the yabbies from the pot and let them cool. Then, remove the meat from the shells and set aside.
- Using a handheld immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender and blend until smooth. Return the soup to the pot.
- Stir in the heavy cream and add salt and pepper to taste.
- Add the yabby meat back into the soup and let it simmer for an additional 5 minutes.
