Yabby Bisque

  1. In a large pot, heat the butter and olive oil over medium heat.
  2. Add the chopped onion, garlic, carrots, and celery and sauté for 5 minutes.
  3. Add the cleaned yabbies to the pot and stir for 2-3 minutes until they start to turn pink.
  4. Add the tomato paste and white wine and stir to combine.
  5. Pour in the chicken or vegetable broth and bring to a simmer.
  6. Cover the pot and let it simmer for 20 minutes.
  7. Remove the yabbies from the pot and let them cool. Then, remove the meat from the shells and set aside.
  8. Using a handheld immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender and blend until smooth. Return the soup to the pot.
  9. Stir in the heavy cream and add salt and pepper to taste.
  10. Add the yabby meat back into the soup and let it simmer for an additional 5 minutes.
