Yabbie (Australian Crayfish)
Ingredients:
- 4 live yabbies
- Salt
- Butter
Instructions:
- Begin by filling a large pot with water and adding a generous amount of salt. Bring the water to a boil.
- While the water is heating up, prepare the yabbies by cleaning and removing the claws.
- Once the water is boiling, carefully place the yabbies into the pot. Cook for 5-7 minutes, or until the yabbies turn bright red in color and the meat is cooked through.
- Remove the yabbies from the pot and allow them to cool for a few minutes.
- In the meantime, melt some butter in a pan over medium heat.
- Once the yabbies have cooled, use a sharp knife to carefully remove the meat from the claws and tail.
- Add the yabby meat to the pan with the melted butter and cook for 2-3 minutes, until heated through.
- Serve the yabby meat with the butter sauce on top.
