Xoupa (Greek Fish Soup)

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until translucent.
  3. Add the carrot, celery, and potato, and sauté until slightly softened.
  4. Add the diced tomatoes and broth to the pot, and bring to a boil.
  5. Reduce the heat to low, and let the soup simmer for 10 minutes.
  6. Season the fish fillets with salt and pepper, and add them to the soup.
  7. Cover the pot and let the fish cook in the soup for 10-15 minutes, or until fully cooked and flaky.
  8. Remove the fish from the pot and flake it into smaller pieces using a fork.
  9. Return the flaked fish to the pot, and stir in the chopped parsley and dill.
  10. Season with additional salt and pepper to taste.
