Xoupa (Greek Fish Soup)
Ingredients:
- 1 pound white fish fillets (such as cod, haddock, or halibut)
- 1/4 cup olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, peeled and diced
- 1 celery stalk, diced
- 1 potato, peeled and diced
- 1 can (14 ounces) diced tomatoes
- 4 cups fish or vegetable broth
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh dill
- Salt and pepper to taste
- Fresh lemon wedges for serving
Instructions:
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until translucent.
- Add the carrot, celery, and potato, and sauté until slightly softened.
- Add the diced tomatoes and broth to the pot, and bring to a boil.
- Reduce the heat to low, and let the soup simmer for 10 minutes.
- Season the fish fillets with salt and pepper, and add them to the soup.
- Cover the pot and let the fish cook in the soup for 10-15 minutes, or until fully cooked and flaky.
- Remove the fish from the pot and flake it into smaller pieces using a fork.
- Return the flaked fish to the pot, and stir in the chopped parsley and dill.
- Season with additional salt and pepper to taste.
