Xouba (Sardine) Salad
Ingredients:
- 8 fresh xoubas (sardines), cleaned and deboned
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup Kalamata olives, pitted
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh lemon juice
- 1/4 cup extra-virgin olive oil
- Salt and pepper to taste
Instructions:
- Preheat the grill to medium-high heat.
- Season the sardines with salt and pepper.
- Grill the sardines for 2-3 minutes on each side, until cooked through.
- In a large bowl, combine the cherry tomatoes, red onion, avocado, olives, feta cheese, and parsley.
- Add in the grilled sardines and gently mix all the ingredients together.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to evenly coat all the ingredients.
- Serve immediately and enjoy your delicious Xouba (Sardine) Salad!
