Xo Sauce with Vegetables
Ingredients:
- 2 tablespoons xo sauce
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, seeded and diced
- 1 cup broccoli florets
- 1 cup snow peas
- 1 cup tofu, diced
- Salt and pepper to taste
- Cooked rice for serving
Instructions:
- In a pan or wok, heat 2 tablespoons of vegetable oil over medium heat.
- Add the diced onions and minced garlic and cook for 2-3 minutes until the onions are translucent.
- Add the red bell pepper, broccoli, and snow peas to the pan and stir-fry for 3-4 minutes until slightly tender.
- Push the vegetables to one side of the pan and add the diced tofu to the other side. Cook for 2-3 minutes until slightly browned.
- In a small bowl, mix together 2 tablespoons of xo sauce and 2 tablespoons of water. Pour this mixture over the vegetables and tofu in the pan.
- Stir-fry everything together for an additional 1-2 minutes until the vegetables are fully cooked and coated in the sauce.
- Add salt and pepper to taste.
- Serve the Xo Sauce with Vegetables over cooked rice and enjoy!
