Xnipec (Yucatecan Salsa)
Ingredients:
- 1 small red onion, diced
- 4 Roma tomatoes, chopped
- 1 habanero pepper, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt to taste
Instructions:
- In a large bowl, combine the diced red onion, chopped tomatoes, diced habanero pepper, and chopped cilantro.
- Squeeze the juice of one lime over the mixture and stir to combine.
- Add salt to taste, starting with a small amount and adding more as desired.
- Cover the bowl and let the salsa sit in the refrigerator for at least 30 minutes to allow the flavors to combine.
- Serve chilled, garnished with extra cilantro if desired.
