Xiphias Souvlaki (Swordfish Skewers)
Ingredients:
- 1 pound swordfish, cut into 1-inch cubes
- 1 red onion, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 10-12 wooden skewers, soaked in water for 30 minutes
Instructions:
- In a large bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, and salt and pepper to make the marinade.
- Add the swordfish cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or up to 4 hours.
- Preheat the grill to medium-high heat.
- Thread the marinated swordfish, red onion, and bell peppers onto the soaked skewers.
- Grill the skewers for 6-8 minutes, or until the swordfish is cooked through and the vegetables are slightly charred, turning occasionally.
- Serve the Xiphias Souvlaki hot with your favorite side dishes and enjoy!
