  1. In a large bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, and salt and pepper to make the marinade.
  2. Add the swordfish cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or up to 4 hours.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated swordfish, red onion, and bell peppers onto the soaked skewers.
  5. Grill the skewers for 6-8 minutes, or until the swordfish is cooked through and the vegetables are slightly charred, turning occasionally.
  6. Serve the Xiphias Souvlaki hot with your favorite side dishes and enjoy!
