Xinjiang Lamb Skewers
Ingredients:
- 1 pound of lamb leg or shoulder, cut into 1-inch cubes
- 1/4 cup vegetable oil
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 12 wooden skewers
Instructions:
- Soak wooden skewers in water for at least 30 minutes to prevent burning.
- In a mixing bowl, combine the vegetable oil, minced garlic, ground cumin, ground coriander, paprika, chili powder, salt, and black pepper.
- Add the cubed lamb to the marinade and mix well. Cover and refrigerate for at least 2 hours or overnight.
- In another bowl, mix together the soy sauce, honey, sesame oil, rice vinegar, chopped cilantro, and green onions.
- Reserve 1/4 cup of the marinade for basting during cooking.
- Preheat grill to medium-high heat.
