Xingren Doufu (Almond Tofu Dessert)
Ingredients:
- 1 package (12 oz) soft tofu
- ½ cup almond milk
- ⅓ cup sugar
- 1 teaspoon vanilla extract
- 2 tablespoons agar-agar powder
- ½ cup sliced almonds
- 1 cup canned fruit cocktail, drained
- ¼ cup sweetened condensed milk
Instructions:
- In a blender, blend the soft tofu, almond milk, sugar, vanilla extract, and agar-agar powder until smooth.
- Pour the mixture into a saucepan and bring to a simmer, stirring constantly.
- Once the mixture thickens, remove from heat and let it cool for about 5 minutes.
- In a square or round dish, sprinkle the sliced almonds evenly on the bottom.
- Spoon the tofu mixture on top of the almonds and spread it out evenly.
- Refrigerate for at least 2 hours.
- In a small mixing bowl, mix the drained fruit cocktail and sweetened condensed milk together.
- Serve the chilled almond tofu with a spoonful of the fruit and condensed milk mixture on top.
