Xigua Salad (Watermelon Salad)
Ingredients:
- 1 small watermelon
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- Salt and pepper, to taste
Instructions:
- Cut the watermelon into bite-sized cubes and place in a large mixing bowl.
- Add the diced cucumber, sliced red onion, crumbled feta cheese, and chopped mint leaves to the mixing bowl with the watermelon.
- In a small bowl, whisk together the olive oil, balsamic vinegar, and salt and pepper.
- Pour the dressing over the watermelon salad and toss to coat all of the ingredients.
- Refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve chilled and enjoy your refreshing and delicious Xigua Salad!
