Xiao Mi (Fried Millet)
Ingredients:
- 1 cup millet
- 2 cups water
- 1/4 tsp salt
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1/2 cup frozen peas and carrots
- 1/4 cup soy sauce
- 1 tbsp sesame oil
- 2 green onions, chopped (optional)
Instructions:
- In a saucepan, combine millet, water, and salt. Bring to a boil over high heat, then reduce heat to low and simmer for 20 minutes.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add garlic and onion, and stir-fry for 1 minute.
- Add frozen peas and carrots to the skillet and continue to stir-fry for 2-3 minutes until heated through.
- Stir in the cooked millet and mix well with the vegetables.
- Add soy sauce and sesame oil to the skillet, and stir until everything is well combined.
- Continue to cook for another 5 minutes, stirring occasionally, until the millet is slightly crispy and fully coated in the sauce.
- Optional: top with chopped green onions before serving.
