  1. In a saucepan, combine millet, water, and salt. Bring to a boil over high heat, then reduce heat to low and simmer for 20 minutes.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add garlic and onion, and stir-fry for 1 minute.
  3. Add frozen peas and carrots to the skillet and continue to stir-fry for 2-3 minutes until heated through.
  4. Stir in the cooked millet and mix well with the vegetables.
  5. Add soy sauce and sesame oil to the skillet, and stir until everything is well combined.
  6. Continue to cook for another 5 minutes, stirring occasionally, until the millet is slightly crispy and fully coated in the sauce.
  7. Optional: top with chopped green onions before serving.
