Xiang Cai (Coriander Salad)
Ingredients:
- 1 bunch of fresh coriander
- 1 cucumber
- 1 red onion
- 2 tablespoons of sesame oil
- 1 tablespoon of rice vinegar
- 1 tablespoon of soy sauce
- 1 tablespoon of honey
- Salt and pepper to taste
Instructions:
- Wash and chop the coriander into small pieces.
- Peel and dice the cucumber into small cubes.
- Thinly slice the red onion.
- In a small bowl, mix together the sesame oil, rice vinegar, soy sauce, honey, salt, and pepper to create the dressing.
- In a large bowl, add the chopped coriander, diced cucumber, and sliced red onion.
- Pour the dressing over the vegetables and toss well to combine.
- Let the salad sit for at least 30 minutes to allow the flavors to blend.
