Xian Bing (Chinese Pan-fried Meat Pie)
Ingredients:
- 2 cups all-purpose flour
- 1 tsp salt
- 1/2 cup hot water
- 1/4 cup cold water
- 1 lb ground pork
- 1/4 cup green onions, finely chopped
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1 tsp sugar
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1/4 cup water
Instructions:
- In a large mixing bowl, combine flour and salt. Slowly add in hot water while mixing, then add in cold water. Knead the dough until smooth. Cover and let rest for 30 minutes.
- In a separate bowl, mix together ground pork, green onions, soy sauce, sesame oil, ginger, garlic, sugar, and black pepper until well combined.
- Divide the dough into 12 equal sized portions. Roll out each portion into a thin circle, about 5 inches in diameter. Place about 2 tbsp of the pork filling in the center of the circle, then fold in half to create a half-moon shape. Pinch the edges to seal the filling inside.
- In a large non-stick skillet, heat 1 tbsp of vegetable oil over medium-high heat. Place 4-5 Xian Bing in the skillet, flat side down, and cook for 2-3 minutes until bottom is golden brown.
