Xiamen-style Noodles
Ingredients:
- 1 pound fresh or dried egg noodles
- 1 tablespoon vegetable oil
- 1 pound sliced pork tenderloin
- 3 cloves garlic, minced
- 1 inch piece of fresh ginger, peeled and minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup sliced shiitake mushrooms
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon rice vinegar
- 1/2 cup chicken broth
- Salt and pepper to taste
- 1/4 cup sliced green onions for garnish
Instructions:
- Cook the egg noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over high heat.
- Add the sliced pork and cook until browned, about 5 minutes.
- Add the minced garlic and ginger and cook for another minute.
- Add the sliced red and green bell peppers and shiitake mushrooms. Cook until vegetables are tender, about 3-4 minutes.
- In a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, and chicken broth. Pour into the skillet and stir to combine with the pork and vegetables.
- Add salt and pepper to taste.
- Add the cooked egg noodles to the skillet and toss to coat in the sauce.
- Cook for an additional 2-3 minutes
