Xiamen-style Noodles

Instructions:

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over high heat.
  3. Add the sliced pork and cook until browned, about 5 minutes.
  4. Add the minced garlic and ginger and cook for another minute.
  5. Add the sliced red and green bell peppers and shiitake mushrooms. Cook until vegetables are tender, about 3-4 minutes.
  6. In a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, and chicken broth. Pour into the skillet and stir to combine with the pork and vegetables.
  7. Add salt and pepper to taste.
  8. Add the cooked egg noodles to the skillet and toss to coat in the sauce.
  9. Cook for an additional 2-3 minutes
