Xi Fa Cai (Black Moss Soup)
Ingredients:
- 200g dried black moss
- 500g pork ribs
- 2 liters water
- 3 slices ginger
- 1 tablespoon dried scallops, soaked in water
- 1 tablespoon goji berries
- 1 tablespoon red dates, pitted
- Salt and pepper to taste
Instructions:
- Soak the dried black moss in a bowl of water for 30 minutes. Rinse thoroughly and drain.
- In a pot, add pork ribs, 2 liters of water, and ginger slices. Bring to a boil, then reduce to a simmer for 30 minutes.
- Add dried black moss, soaked dried scallops, goji berries, and red dates to the pot. Stir gently and simmer for another 30 minutes.
- Season with salt and pepper to taste.
