Xi'an-style Cold Noodles

  1. In a large pot of boiling water, cook the noodles according to package instructions. Drain and rinse with cold water to stop cooking. Set aside.
  2. In a small bowl, mix together the soy sauce, rice vinegar, chili oil, sugar, garlic, ginger, and sesame oil.
  3. In a large bowl, mix the noodles with the sauce until well coated.
  4. Serve cold, topped with green onions, cilantro, crushed peanuts, and sliced cucumbers.
