Xi'an-style Cold Noodles
Ingredients:
- 1 pound dried Chinese wheat noodles
- 1/2 cup soy sauce
- 1/4 cup rice vinegar
- 3 tablespoons chili oil
- 2 tablespoons granulated sugar/li>
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 tablespoon sesame oil
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup crushed roasted peanuts
- Sliced cucumbers, for serving
Instructions:
- In a large pot of boiling water, cook the noodles according to package instructions. Drain and rinse with cold water to stop cooking. Set aside.
- In a small bowl, mix together the soy sauce, rice vinegar, chili oil, sugar, garlic, ginger, and sesame oil.
- In a large bowl, mix the noodles with the sauce until well coated.
- Serve cold, topped with green onions, cilantro, crushed peanuts, and sliced cucumbers.
