Xacuti (Goan Chicken Curry)
Ingredients:
- 1 kg boneless, skinless chicken thighs
- 2 large onions, finely chopped
- 4 cloves of garlic, minced
- 2 inches of ginger, grated
- 2 green chilies, finely chopped
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 1 tablespoon red chili powder
- 1 teaspoon black pepper
- 1 teaspoon mustard seeds
- 1 teaspoon fenugreek seeds
- 1 teaspoon fennel seeds
- 1 inch cinnamon stick
- 2-3 dried red chilies
- 2-3 cloves
- 2-3 green cardamom pods
- 1 cup grated coconut
- 1/2 cup cashews, soaked in water
- 1 cup water
- Salt to taste
- Oil for cooking
Instructions:
- In a blender, blend together grated coconut and soaked cashews with 1 cup of water to make a smooth paste. Set aside.
- Heat 2 tablespoons of oil in a large pot over medium heat. Add mustard seeds, fenugreek seeds, fennel seeds, cinnamon stick, dried red chilies, cloves, and cardamom pods. Let them splutter for a few seconds.
- Add chopped onions, garlic, ginger, and green chilies. Sauté until the onions are translucent.
- Add the chicken to the pot and stir to coat the chicken with the onion mixture.
- Add turmeric powder, coriander powder, cumin powder, red chili powder, black pepper, and salt. Mix well and cook for 5 minutes.
