Winter Squash Soup
Ingredients:
- 1 medium winter squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 4 cups vegetable or chicken broth
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup heavy cream (optional)
- Optional toppings: croutons, fresh herbs, pumpkin seeds
Instructions:
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and cook until translucent, about 5 minutes.
- Add minced garlic and cubed squash, cook for an additional 2-3 minutes.
- Pour in vegetable or chicken broth.
- Season with salt, pepper, cumin, cinnamon, and nutmeg.
- Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes, or until squash is tender.
- Using an immersion blender or transferring to a regular blender, blend soup until smooth.
- Optional: stir in heavy cream for a creamier soup.
- Serve hot and garnish with desired toppings.
