Winter Squash Soup

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cubed squash, cook for an additional 2-3 minutes.
  4. Pour in vegetable or chicken broth.
  5. Season with salt, pepper, cumin, cinnamon, and nutmeg.
  6. Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes, or until squash is tender.
  7. Using an immersion blender or transferring to a regular blender, blend soup until smooth.
  8. Optional: stir in heavy cream for a creamier soup.
  9. Serve hot and garnish with desired toppings.
