Wiener Schnitzel
Ingredients:
- 4 thin slices of veal or pork (approx. 120g each)
- 1 cup all-purpose flour
- 2 eggs
- 1 cup breadcrumbs
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 cup vegetable oil
- Lemon wedges for serving
Instructions:
- Prepare your workstation by setting up three shallow dishes for dredging the meat - one with flour, one with beaten eggs, and one with breadcrumbs.
- Take each slice of meat and pound it with a meat tenderizer until it is thin and even (approx. 1/4 inch thick).
- In a small bowl, mix together the salt, black pepper, and paprika.
- Season both sides of each slice of meat with the spice mixture.
- Start by dredging each slice in flour, shaking off any excess.
- Dip the slices in beaten eggs, making sure to coat both sides.
- Finally, coat each slice with breadcrumbs, pressing them on gently to make sure they stick.
- In a large frying pan, heat the vegetable oil over medium-high heat.
- Carefully place each slice of breaded meat into the pan and cook for about 2-3 minutes on each side, until golden brown.
- Remove the Wiener Schnitzel from the pan and place on a paper towel to absorb any excess oil.
- Serve hot, with lemon wedges on the side for squeezing over the meat.
