Whoopie Pies
Ingredients:
- 1 ½ cups of all-purpose flour
- 1 tsp of baking powder
- ½ tsp of baking soda
- ¼ tsp of salt
- 1 cup of sugar
- ½ cup of unsalted butter, softened
- 1 egg
- 1 tsp of vanilla extract
- 1 cup of milk
- 1 jar of marshmallow creme
- 1 cup of powdered sugar
- 1 tsp of vanilla extract
- Food coloring (optional)
Instructions:
- In a mixing bowl, sift together the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together the sugar and butter until light and fluffy.
- Add in the egg and vanilla extract, and mix until well combined.
- Slowly add in the dry ingredients, alternating with the milk, and mix until a smooth batter forms.
- Preheat your oven to 350°F (175°C), and line a baking sheet with parchment paper.
- Using a small cookie scoop, or spoon, drop rounded balls of batter onto the prepared baking sheet. Leave about 2 inches of space between each ball.
- Bake for 10-12 minutes, or until the tops of the cookies are set and slightly golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, make the filling by mixing together the marshmallow creme, powdered sugar, and vanilla extract. (you can also add in food coloring
