Whoopie Pies

  1. In a mixing bowl, sift together the flour, baking powder, baking soda, and salt.
  2. In a separate bowl, cream together the sugar and butter until light and fluffy.
  3. Add in the egg and vanilla extract, and mix until well combined.
  4. Slowly add in the dry ingredients, alternating with the milk, and mix until a smooth batter forms.
  5. Preheat your oven to 350°F (175°C), and line a baking sheet with parchment paper.
  6. Using a small cookie scoop, or spoon, drop rounded balls of batter onto the prepared baking sheet. Leave about 2 inches of space between each ball.
  7. Bake for 10-12 minutes, or until the tops of the cookies are set and slightly golden brown.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cookies are cooling, make the filling by mixing together the marshmallow creme, powdered sugar, and vanilla extract. (you can also add in food coloring
