White Chicken Chili

  1. In a large pot, cook chicken, onion, and garlic over medium heat until chicken is cooked through, about 5-7 minutes.
  2. Add green chilies, white beans, chicken broth, cumin, oregano, cayenne pepper, salt, and black pepper to the pot. Stir to combine.
  3. Bring chili to a boil, then reduce heat and let simmer for 20-25 minutes, stirring occasionally.
  4. Remove pot from heat and stir in shredded Monterey Jack cheese until melted and well combined.
  5. Serve hot, garnished with sour cream and sliced green onions, if desired.
