White Chicken Chili
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (4 ounces) chopped green chilies
- 2 cans (15.5 ounces each) white beans, drained and rinsed
- 1 cup chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded Monterey Jack cheese
- Sour cream and sliced green onions (for garnish, optional)
Instructions:
- In a large pot, cook chicken, onion, and garlic over medium heat until chicken is cooked through, about 5-7 minutes.
- Add green chilies, white beans, chicken broth, cumin, oregano, cayenne pepper, salt, and black pepper to the pot. Stir to combine.
- Bring chili to a boil, then reduce heat and let simmer for 20-25 minutes, stirring occasionally.
- Remove pot from heat and stir in shredded Monterey Jack cheese until melted and well combined.
- Serve hot, garnished with sour cream and sliced green onions, if desired.
