White Bean Soup

  1. In a large pot, heat olive oil over medium heat. Add onions, garlic, celery and carrots, and cook until softened.
  2. Add the soaked beans and stir to combine with the vegetables.
  3. Pour in the vegetable broth and add salt, pepper, bay leaf, and thyme. Bring to a boil, then reduce heat to low and let simmer for 1 hour, or until the beans are tender.
  4. Once the beans are cooked, remove the bay leaf and stir in the chopped parsley.
  5. Using an immersion blender, blend the soup until smooth and creamy.
  6. Serve hot and enjoy your delicious White Bean Soup!
