White Bean Soup
Ingredients:
- 1 cup dried white beans, soaked overnight
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 celery stalks, chopped
- 2 carrots, chopped
- 6 cups vegetable broth
- Salt and pepper, to taste
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/4 cup chopped fresh parsley
Instructions:
- In a large pot, heat olive oil over medium heat. Add onions, garlic, celery and carrots, and cook until softened.
- Add the soaked beans and stir to combine with the vegetables.
- Pour in the vegetable broth and add salt, pepper, bay leaf, and thyme. Bring to a boil, then reduce heat to low and let simmer for 1 hour, or until the beans are tender.
- Once the beans are cooked, remove the bay leaf and stir in the chopped parsley.
- Using an immersion blender, blend the soup until smooth and creamy.
- Serve hot and enjoy your delicious White Bean Soup!
