Welsh Rarebit
Ingredients:
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon ground mustard
- 1/8 teaspoon ground nutmeg
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 egg yolk
- 1/4 cup beer
- 8 slices bread
Instructions:
- In a saucepan, melt butter over medium heat.
- Add flour, salt, mustard, and nutmeg, stirring until smooth.
- Gradually stir in milk, cooking until mixture is thickened and bubbly.
- Add cheese and stir until melted.
- In a small bowl, beat egg yolk and beer together.
- Add to the cheese mixture, stirring constantly until well combined.
- Toast bread slices until golden brown and arrange on a baking sheet.
- Spread cheese mixture onto each toast and broil until bubbly and golden brown.
