  1. In a saucepan, melt butter over medium heat.
  2. Add flour, salt, mustard, and nutmeg, stirring until smooth.
  3. Gradually stir in milk, cooking until mixture is thickened and bubbly.
  4. Add cheese and stir until melted.
  5. In a small bowl, beat egg yolk and beer together.
  6. Add to the cheese mixture, stirring constantly until well combined.
  7. Toast bread slices until golden brown and arrange on a baking sheet.
  8. Spread cheese mixture onto each toast and broil until bubbly and golden brown.
