Watermelon Gazpacho
Ingredients:
- 4 cups chopped watermelon
- 1 cucumber, peeled and chopped
- 1 red bell pepper, seeded and chopped
- 1 small red onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh herbs (such as cilantro, basil, or mint)
- 1/4 cup crumbled feta cheese (optional)
Instructions:
- In a blender, combine watermelon, cucumber, bell pepper, red onion, and garlic. Blend until smooth.
- Add in olive oil, red wine vinegar, salt, and black pepper. Blend until well combined.
- Pour gazpacho into a bowl and stir in chopped herbs.
- Cover and refrigerate for at least 1 hour.
- When ready to serve, pour into bowls and top with crumbled feta cheese, if desired.
