Watermelon Gazpacho

  1. In a blender, combine watermelon, cucumber, bell pepper, red onion, and garlic. Blend until smooth.
  2. Add in olive oil, red wine vinegar, salt, and black pepper. Blend until well combined.
  3. Pour gazpacho into a bowl and stir in chopped herbs.
  4. Cover and refrigerate for at least 1 hour.
  5. When ready to serve, pour into bowls and top with crumbled feta cheese, if desired.
