Waldorf Astoria Cake
Ingredients:
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 1/4 cup brandy
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup chopped apples
- 1/2 cup chopped celery
- 1/2 cup shredded coconut
- 1/2 cup chopped maraschino cherries
Instructions:
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
- In a small bowl, mix together the walnuts, raisins, and brandy. Let this mixture sit while you prepare the rest of the cake.
- In a medium bowl, mix together the flour, baking soda, cinnamon, cloves, and nutmeg.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the vegetable oil, buttermilk, and vanilla extract. Add in the eggs one at a time, mixing well after each addition.
